A five-course lute is a medieval lute, often played with a quill. Either you have a copy of an instrument in a painting, or you might have a modern oud or ud from the Middle East, which is more likely. There is almost no surviving music specifically for the medieval lute, so you have to be creative in adapting  known medieval tunes.
